I'm a complete newbie to Agile and JIRA and I'm learning as I go so please bare with me!
Let's say I have 3 resources and each are working on 3 different tasks that take one day each.
In a Gantt chart, the total time until completion would be 1 day. All your resources are allocated in separate tasks, therefore, in one day all 3 items are complete.
In Jira Agile, I'm using time estimation, not story points. When I drop in these same 3 tasks allocated across 3 assignees in one sprint, sprint estimate is 3 days. Is there an agile fundamental I'm missing here? Why would it not be 1 day?
Any answers, advice, or pointing in the right direction would be most appreciated. Thanks!

The Estimate for th Sprint is effort and not duration. So 3 - 1day tasks is 3 days of effort.
Gantt is not Scrum, or agile. Gantt's are absurd attemps to forecast the unpredicable effort and pace of work over a long period of time.
Agile relies on the concept of Velocity instead.
A team of 3 reources on average delivers 9 days of effort in a 2-week sprint. At first you just try for an ambitios goal (70-80% allocation), and after a few sprints the Velocity Chart (reporting tab) will indicate whether you need to increase or decrease your planned commitment for upcomming sprints.
