I would like to hide some default fields on the View Issue (Priorty or Description for example) for certain projects but not for others.
Is it possible to programmatically or otherwise modify the View Issue screen so that it is better suits a specific/custom project type? If so, how would I go about achieving this?

Hello Declan,
You can create different Screen Schemes and associate each of them with projects. For more information, please take a look at: https://confluence.atlassian.com/display/JIRA/Configuring+Fields+and+Screens

This isn't applicable to the View Issue screen as far as I can see. The screen I'm looking to modify can be seen in the following picture: https://confluence.atlassian.com/download/attachments/391087328/gh_6-2-1_agile-info-in-jira.png?version=2&modificationDate=1424670763354&api=v2

To expand on my reply, I'm looking for a way around this: "System fields on View Issue screen — System fields on the default 'View Issue' screen (e.g. Summary, Security Level, Issue Type, etc.) are fixed. This means that they will always appear on the 'View Issue' screen, even if you configure the Screen to move them onto a separate tab. Any custom fields (except 'Date' fields) that have been added to the 'View Issue' screen can be moved onto a separate tab. Note, this restriction only applies to the screen associated with the 'View Issue' operation."
